    Pkg. (3 oz.) Lemon Jello

  • 2/3

    Cup Vegetable Oil

  • 2/3

    Cup hot Water

  • 4

    Large Eggs

  • Glaze:

  • 2

    Cups Powdered Sugar

  • 2

    Tbs. Lemon Juice

  • 1

    tsp. Lemon Zest

Directions

Preheat oven to 350 degrees. Grease and flour a 12 cup Bundt cake pan. Place cake mix, Jello, oil, water, and eggs in a large mixing bowl and beat on low speed of electric mixer for 1 minute. Scrape down sides of bowl and increase speed of mixer to medium and beat for an additional 2 minutes. Place in cake pan and bake for 40 minutes at 350 degrees or until the center of cake springs back when lightly touched in the middle. Cool in pan for 10 minutes. Meanwhile prepare the glaze. Combine all ingredients in a small bowl and beat until smooth. Invert cake onto a platter and spoon glaze evenly over the warm cake so that it drizzles over the edges and down into the center. Slice and serve warm or let it cool before serving.
