Coconut Fudge or Centers

Ingredients

  • 1 1/2 cup sugar
  • 1/2 cup corn syrup
  • 1/2 cup top milk (cream)
  • 1/4 cup molasses
  • 1 tbsp vinegar
  • 1/8 tsp salt
  • 1 1/4 cups moist shredded coconut
  • 3 tbsp butter

Preparation

Step 1

Combine in a deep saucepan sugar, corn syrup, top milk, molasses, vinegar and salt.

Stir these ingredients over medium heat until sugar is dissolved. Bring to a boil. Cook about 3 minutes until the steam has washed down crystals which may have formed on the sides. Uncover, cook slowly to soft ball stage (238 F) without stirring. Remove from heat and stir in shredded coconut and butter. Pour onto buttered platter. When cool enough to handle shape into balls.
