Bruschetta

A fresh Italian appetizer!

Ingredients

  • 6 slices Italian bread
  • 1 garlic clove, minced
  • 4 tablespoons extra virgin olive oil
  • 6 large, firm tomatoes
  • salt
  • black pepper
  • 1/4 cup basil
  • 1 tablespoon balsamic vinegar

Preparation

Step 1

With sharp knife, make a small cross on bottom of each tomato. Parboil tomatoes in boiling water 1 minute. Remove from boiling water and immerse in ice-cold water. Immediately peel tomatoes. Remove all seeds and chop tomatoes.

Toast bread 5" under a broiler on each side.

Use 3 tablespoons of olive oil to brush on one side of toast. Sprinkle each slice with minced garlic.

Heat 1 tablespoon of olive oil in skillet. Add tomatoes, salt and black pepper and toss 1 minute. Add basil and balsamic vinegar. Mix.

Top each slice with the mixture and serve immediately.
