Quick Luau Chicken

Ingredients

  • 4 skinless boneless chicken breast halves
  • 1/2 cup pineapple or mango juice
  • 2 tbsp. low sodium soy sauce
  • 1 tbsp. honey
  • 1 tsp minced fresh ginger
  • 2 garlic cloves, minced
  • 1 tbsp. canola oil
  • fresh chopped cilantro, to taste

Preparation

Step 1

place each chicken breast half between two sheets of plastic wrap and pound to 1/2 inch thickness using mallet.

combine pineapple, (or mango), juice, soy sauce, honey, ginger and garlic in a small bowl.

heat oil in large skillet over medium heat and add chicken until browned, about 4 mins on each side. stir in sauce, and heat until chicken is cooked through and sauce thickens slightly.

sprinkle with chopped cilantro and serve.
