You can also use other fruits such as apple, apricot, pear etc.
Poach the fruit in a little sugar syrup if you prefer a sweeter taste.

Ingredients

  • 2 whole eggs
  • 100 g - 3.5oz sugar
  • 180 g - 6.3oz plain white flour
  • 100 g - 3.5oz butter
  • 1 tsp baking powder
  • 3 fresh plums

Preparation

Step 1

Crack the eggs in a large mixing bow.
Add the sugar and mix well.
Sieve and add the flour.
Add the baking powder.
Mix thoroughly.
Add the melted butter
Mix well.
Butter your mould/s
Fill two thirds with mixture.
Add sliced plums (8 slices per fruit).
Coat plums with melted butter, sprinkle caster sugar.
Bake in oven at 180C for 20 minutes
