Strawberry Crumble-top Muffins

Ingredients

  • 1/4 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 1/2 cups strawberries, diced small
  • CRUMBLE TOPPING
  • 1/4 cup butter
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup sugar

Preparation

Step 1

Preheat oven to 375.

Cream butter and sugar. Beat in egg and vanilla.

In a separate bowl, combine flour, baking powder, and salt.

Slowly add milk and flour mixture, alternating between the two.
Beat until well combined. Gently fold in half the strawberries.

Put two tablespoons batter in each muffin liner. Load up tops with remaining berries.

Combine the crumble ingredients and sprinkle over berries.

Reduce heat to 350 and bake for 18 to 20 minutes.
