Ingredients
- 1 tbsp. canola olive oil
- 4 skinless boneless chicken breasts, cut into bite size pieces
- 2 garlic cloves, minced
- 1 large onion, diced
- 1/8 tsp salt
- 1 tbsp. curry powder
- 2 cups low sodium chicken broth
- 2 cups cooked brown rice
Preparation
Step 1
heat oil in a large skillet over medium heat. add chicken and saute until lightly browned, about six minutes; remove chicken from the pan.
add minced garlic, onion, curry powder and salt, and saute an additional five mins; reduce heat to low and add chicken pieces back into pan; stir in chicken broth. simmer five more mins and serve with brown rice.
