Roxanne’s Famous Taco Salad

So easy you can’t mess it up.

Ingredients

  • 1 . 3 bags shredded lettuce( for some reason it’s better when it’s shredded)
  • 2 . 1 package of any kind of meatless ground meat
  • 3 . 1 package taco seasoning
  • 4 . 1 bag of shredded cheese (I use Mexican blend or fiesta blend)
  • 5 . 1 lg. tomato (chopped)
  • 6 . 1 sm or med red onion (chopped)
  • 7 . 1 can dark red kidney beans (drained, rinsed and pat dry)
  • 8 . 1 bag Doritos ( I use spicy nacho cheese, open package slightly to let out air and crunch the whole thing up to small pieces)
  • 9 . 1 bottle of spicy ranch dressing by Hidden Valley (sometimes its hard to find, I get it at either Wallmart..or at Stater Bros)

Preparation

Directions: Cook or really just warm the meatless ground meat in a pan on stove, adding a tiny bit of water just so it doesn’t stick, and the taco seasoning. If you buy the frozen kind just cook until defrosted, if you buy refrigerated kind just cook until the taco seasoning is mixed and it’s no longer cold. Set aside. I let it come to room temp. I don’t like to put it in cold or hot as it will wilt the salad. The n just layer everything. First shredded lettuce on bottom, then kidney beans, then tomato, then onion, then meat (as long as it’s room temp), then cheese and last sprinkle the Doritos all over the top. Do not add dressing and toss until your ready to serve. This makes that large bowl I always make, so if you want it smaller you can always cut it in half. You can never go wrong with this dish. I have never had anyone not like this.
