Ingredients

  • For the Strawberries
  • 5 cups fresh sliced strawberries
  • 3/4 cup sugar
  • 2 Tablespoons cornstarch
  • pinch salt
  • For the Biscuits
  • 1 1/2 cups flour
  • 1/4 cup sugar, divided
  • 2 teaspoons cinnamon, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter
  • 1 cup heavy whipping cream

Preparation

Step 1

Preheat the oven to 400 degrees. Butter the bottom and sides of an 8x8 baking pan.
Place the sliced strawberries and sugar in a saucepan and let sit for 5-10 minutes while the berries macerate. Stir in the cornstarch and salt.
Bring the mixture to a boil over medium to high heat. Cook for 1 minute, stirring constantly. Pour the berries into the prepared dish.
Mix together the flour, 2 Tablespoons sugar, 1 teaspoon cinnamon, baking powder, and salt in a bowl. Cut the cold butter into the dry ingredients with a fork or pastry blender until there are small crumbs.
Stir in the heavy cream gently until soft dough forms. Drop the mixture by spoonfuls on top of the berries in the pan.
Mix together the remaining sugar and cinnamon and sprinkle it over the top of the dough. Bake for 25 minutes. Remove and serve hot with vanilla ice cream.

Notes

*The berries will bubble up the sides of the pan. You can place a baking sheet on the oven rack under your dish just in case it boils over.
