Chicken Casserole

Makes 24-30 Servings. This will feed a crowd.

Ingredients

  • 2 (4 lb. each) Whole Chickens
  • 32 Slices Bread
  • 2 Cups Onions, chopped
  • 2 Cups Celery, chopped
  • 6 Eggs
  • 6 Cups Milk
  • 1 Tbs. Salt
  • 1 tsp. Pepper
  • 2 Cups Mayonnaise
  • 4 (10 3/4 oz.) Cans Cream of Chicken Soup
  • 2 Cups Grated Cheese

Preparation

Step 1

Cook whole chickens until meat is soft. Cool, debone and dice meat. Cut bread into 1" squares. Put 1/2 of bread into bottom and large, greased baking pan. Add chicken pieces, onion, and celery. Add remaining cubes. Combine eggs, milk, salt and pepper, and mayonnaise. Beat well and pour over bread cubes and chicken. Let stand 1 hour or overnight. Immediately before baking, pour cream of chicken soup over all. Bake at 325 degrees for 1 hour. Remove from oven and sprinkle cheese over top. Bake 1/4 to 1/2 hour longer.
