Cauliflower pancakes

Ingredients

  • cauliflower head
  • 2 garlic cloves, finely chpped
  • 1/4 chopped fresh dill
  • 1/2 plus 2 TBS. of breadcrumbs
  • 1 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/2 tsp. cayenne
  • 1/4 tsp pepper
  • 2-3 eggs
  • olive oil for frying

Preparation

Step 1

Cook cauliflower in salted water. Drain and mash with garlic and dill. Leave slightly chunky. mix in breadcrumbs, baking powder,salt and pepper. Beat 2 eggs in small bowl and mix into batter. If batter is dry, beat in other egg. Batter should be moist but not runny. Can be made a day ahead.

Add enough oil to coat the bottom of the pan over medium-high heat. Drop by TBS. inot oil and flatten. Cook until golden. about 2 minutes per side. Transfer to rimmed baking sheet. Can be done up to 2 hours ahead.

Preheat oven to 350. Bake uncovered until heated through, about 10 minutes.
