Tomato Basil Pasta Salad with Asiago/Goat Cheese

Ingredients

  • 6 Roma tomatoes, diced
  • 1/2 cup thinly sliced fresh basil
  • 4 oz crumbled goat cheese or 1 cup Asiago petals
  • 2 cloves minced garlic
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 tsp each salt & pepper
  • 375 g cooked penne or rotini pasta

Preparation

Step 1

Dice tomatoes and place in a large bowl. Add basil, cheese, garlic, olive oil, vinegar salt & pepper. Toss gently and let stand at room temperature for 30 mins. Add cooled pasta and cheese to tomatoes and combine.
