Vegan Scrambled "Eggs"

When Shawn and I decided to be vegan for 3 weeks, we enjoyed this for a number of breakfasts. I even have a spice bottle that has this mixture ready to go to make these "eggs."

Ingredients

  • 2 teaspoons onion powder
  • 1 teaspoons garlic powder
  • 1/2 teaspoon tumeric
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1 teaspoon parsley flakes
  • 1 pound tofu, more or less depending on what you want
  • Vegetable oil
  • 1 serving = 4 ounces tofu to 1 1/4 teaspoon of seasoning.

Preparation

Step 1

Heat oil in a pan.

Break up the amount of tofu you want to eat, and put into the pan to saute.

Add the seasoning, I add more than the recommended amount of 1 1/4 tsp. to probably about 2 teaspoons.

Saute for about 5 minutes.

Serve.
