Baked Atrichokes

Ingredients

  • 4 artichokes
  • Juice of two lemons
  • 8 tbs olive oil
  • Salt
  • Pepper
  • 4 tbs minced garlic
  • Fresh parsley, chopped
  • Fresh Parmesan cheese, shredded

Preparation

Step 1

1. Preheat oven to 425 degrees

2. Cut off stem at base of artichokes. Cut off the top of the artichokes to expose the inside. Cut off the prickly ends of the leaves.

3. Squeeze the juice of 1 half lemon onto each of 4 artichokes. Drizzle 2 tbs olive oil on each choke. Sprinkle salt and pepper to taste.

4. Spoon 1 tbs of minced garlic on the top of the choke.

5. Sprinkle parsley onto each choke making sure to get some in between the leaves. Sprinkle Parmesan cheese on chokes, getting some in between the leaves and a large amount right on top of artichoke. Add more pepper if desired.

6. Wrap each individual choke in foil. Place in shallow baking dish and bake for 1 hour and 20 minutes.

7. Take out of foil and serve with your favorite dipping sauce
