White Chocolate Raspberry Cheesecake

Ingredients

  • 2 pkg (8 oz.) cream cheese softened
  • 1/2 c. sugar
  • 1/2 tsp. vanilla
  • 2 eggs
  • 3 squares (3 oz.) white baking chocolate melted (can be white choc. chips)
  • 1 (9 in.) chocolate crumb crust
  • 1/4 c. red raspberry preserves

Step 1

-Mix cream cheese, sugar, and vanilla with electric mixer until blended. Add eggs and blend. Stir in melted white choc. (might melt in microwave 30 sec. and stir).
-Pour into crust. Microwave preserves in small bowl on high for 15 secs. Dot on top of cheesecake with small spoonfuls. Cut through batter several times to give a swirl effect.
-Bake at 350 deg. for 35-40 mins. or until the center is almost set. It will be a little jiggly. Cool. Refrig. 3 hrs or overnight. Serves 8
