Chicken with Peanut-Chili Glaze

Ingredients

  • 1/2 cup peanut butter
  • 1/2 cup chicken broth
  • 2 tbsp tamari (or soy sauce)
  • 2 tbsp honey
  • 1 tbsp fresh lime juice
  • 2 tbsp fresh lime zest
  • 2 tsp chili paste
  • 4 boneless chicken breasts
  • salt & pepper
  • Lime wedges and finely diced red bell pepper for garnish

Preparation

Step 1

1. Whisk togeter first seven ingredients. Reserve 1/3 cup for later use. Marinate chicken breasts in remaining sauce. Refrigerate at least 30 minutes.

2. Preheat oven to 425 degrees. Remove chicken from fridge, discard used marinade and set chicken on baking sheet lined with parchment paper. Pour reserved marinade over chicken. Season with salt & pepper and roast chicken in oven for 10 minutes.

3. Reduce temperature to 375 degrees and continue roasting chicken for 15 minutes. Garnish and serve.
