Almond-Arugula Gremolata

Ingredients

  • 1 packed cup arugula, roughly chopped
  • 1/2 cup almonds, toasted and chopped
  • 1 1/2 tablespoons finely grated lemon zest (from 2 lemons)
  • 1 garlic clove, finely chopped
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 teaspoons lemon juice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

DIRECTIONS

Toss together the arugula, almonds, lemon zest, and 
garlic in a large bowl. Stir in the olive oil, lemon juice, 
salt, and pepper. Serve immediately, or refrigerate in an airtight container up to 2 days.
