Ingredients
- 2 c sugar
- 3/4 c vegetable oil
- 3 eggs
- 1 T vanilla extract
- 1 1/2 tsp coconut extract
- 2 c (10 oz) AP flour
- 1 c (4 oz) cake flour
- 1 tsp salt
- 2 1/4 tsp baking powder
- 2 c canned coconut milk, shaken
Preparation
Step 1
1. Preheat oven to 350 (325 for cupcakes) and spray three 8" round cake pans.
2. Combine sugar, oil and eggs in a mixer bowl and beat for 30 seconds until combined. Stir in extracts.
3. Sprinkle in dry ingredients followed by coconut milk and beat for 2 minutes.
4. Pour into prepared pans and bake for 25 minutes (less for cupcakes) until a cake tester comes out clean. Cool 10 minutes in pan and then turn out to a cooling rack.
