Super Moist Coconut Cake/Cupcakes

Korinne's recipe for cupcakes

Ingredients

  • 2 c sugar
  • 3/4 c vegetable oil
  • 3 eggs
  • 1 T vanilla extract
  • 1 1/2 tsp coconut extract
  • 2 c (10 oz) AP flour
  • 1 c (4 oz) cake flour
  • 1 tsp salt
  • 2 1/4 tsp baking powder
  • 2 c canned coconut milk, shaken

Preparation

Step 1

1. Preheat oven to 350 (325 for cupcakes) and spray three 8" round cake pans.

2. Combine sugar, oil and eggs in a mixer bowl and beat for 30 seconds until combined. Stir in extracts.

3. Sprinkle in dry ingredients followed by coconut milk and beat for 2 minutes.

4. Pour into prepared pans and bake for 25 minutes (less for cupcakes) until a cake tester comes out clean. Cool 10 minutes in pan and then turn out to a cooling rack.

**Frost with Coconut-Cream Cheese Frosting
