Ingredients
- 1- 1/2 cups milk
- 1/4 cup sugar
- 2 tsp. salt
- 1/2 cup margarine
- 1 cup unseasoned mashed
- potatoes
- 1/2 cup very warm water (110 -115)
- 2 pkgs. yeast
- 7- 1/2 cups unsifted flour
- 1 -1/2 cups raisins
- 1/2 cup sugar
- 2 tsp. cinnamon
Preparation
Step 1
In small saucepan heat milk until bubbles form around edge of pan, then remove from heat. Add 1/4 cup sugar, salt, and 1/2 cup margarine. Stir until melted. Add potatoes and cool to lukewarm. Sprinkle yeast over warm water in large bowl and let dissolve. Add milk mixture and 3 1/2 cups flour, beat with electric mixer until smooth. Stir in raisins. Gradually add remaining flour. Knead until smooth and elastic. Place in greased bowl and cover with towel. Let rise until doubled.
Mix sugar and cinnamon. Divide dough in half. Roll 1/2 of dough into 16 x 8" rectangle. Sprinkle with 1/2 the cinnamon and sugar mixture. From narrow side, roll up jelly fashion. Tuck ends under and place seam side down in greased bread loaf pan. Brush with 1 Tbsp. melted oleo. Repeat with 2nd half. Let rise .
Bake at 375 degrees for 35 - 40 minutes. Tops should be well browned. Remove from pans and cool on rack. May sprinkle with additional cinnamon and sugar.
