Ingredients
- 3-5 lbs. corn beef
- 1 head cabbage
- 1 lb. carrots
- 6-8 onions
- celery leafs
- peppercorns
- whole cloves
- ground pepper
Preparation
Step 1
In a large pot cover corn beef with water and bring to boil. Reduce heat and simmer for 30 minutes. Drain corn beef and rinse. Insert whole cloves into corn beef and cover with water. Add celery leafs and peppercorns. Simmer for about 3 hours. Remove corn beef.
While corn beef is cooking cut up carrots and potatoes. Cut cabbage into wedges and skewer.
After removing corn beef, add carrots and potatoes. Cook for 20 minutes and then add cabbage wedges. Cook until vegetables are tender.
While vegetables are cooking, slice corn beef very thinly.
CORN BEEF GLAZE
2/3 cup brown sugar packed
1/3 cup yellow mustard
1/3 cup ketchup
Spread glaze in between slices and on
top. Bake @ 350 degrees for 15 minutes.
