Ingredients
- Apricot Sauce:
- 18 dried apricots, halved
- water
- 1 large egg
- 1/4 C finely chopped onion
- 1/4 C cornflake crumbs
- 1 tsp Worcestershire sauce
- 1/2 tsp dried rosemary, crushed
- 1 lb lean ground beef
- 1/2 C apricot jam
- 1/4 C hickory BBQ sauce
- 1 T apple cider vinegar
Preparation
Step 1
Pout apricot halves in medium bowl. Cover with water. Let stand for 15 minutes until softened. Drain; squeeze out excess water and blot.
Combine next 5 ingredients. Add beef. Mix well. Divide into 36 equal portions. roll into balls. Dent each with thumb. Place 1 apricot half into each dent. Re-roll to cover apricot. Arrange on greased sheet with sides. Bake in 400 oven for 15 minutes until fully cooked.
Apricot Sauce: Combine jam, BBQ sauce and vinegar in small saucepan. Heat and stir on medium for 3 minutes until heated through. Makes about 1 C. Pour over meatballs. Stir until coated. Bake covered in 350 oven for about 20 minutes until boiling.
