Sourdough Pancakes

Ingredients

  • 1 cup unbleached all purpose flour
  • 2 tbsp.sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 large eggs
  • 1 cup sourdough starter
  • 1/2 cup milk
  • 2 tbsp. vegetable oil plus additional for brushing skillet

Preparation

Step 1

Preheat oven to 250 degrees

Into a bowl sift together flour, sugar, baking powder, baking soda, and salt. In a large bowl whisk together eggs, starter, milk, and 2 tablespoons oil and stir in flour mixture until combined well.

Heat a 10 inch heavy skillet over moderate heat and brush with oil. Working in batches of 2 pour 1/4 cup measures of batter into skillet and cook pancakes until bubbles appear on tops and undersides are golden brown. Flip pancakes.

Brush skillet with oil between batches as needed. Transfer pancakes as cooked to a platter and keep warm in oven.
