Ingredients
- 3 Tbsp. sugar
- 1 cup cottage cheese
- 2 Tbsp. butter
- 2 Golden Delicous apples, peeled, quartered, and thinly sliced
- 1 Tbsp.lemon juice
- 1/2 tea. cinnamon
- 12 slices cinnamon-raisin bread, lightly toasted
- 1 1/3 cups milk
- 3 eggs
- 1 tea. vanilla
- 1/4 tea. salt
Preparation
Step 1
Preheat oven to350 degrees. Lightly butter 8" square glass baking dish.
In a small bowl, stir 2 Tbsp. sugar into cottage cheese; set aside.
In a 10" skillet, melt 1 Tbsp. butter over medium heat. Add apples, remaining 1 Tbsp. sugar, lemon juice, and cinnamon and saute, tossing occasionally, 5 minutes, or until apples are softened.
Fit 4 bread slices over bottom of baking dish. Top with half of cottage cheese and half of sauteed apples. Top with 4 bread slices, remaining cottage cheese, and remaining apples. Top with remaining 4 bread slices.
In medium bowl, whisk together milk, eggs, vanilla, and salt. Pour mixture over pudding and let stand 10 minutes; with spatula, press down on bread so top layer will soak up some of the egg mixture. Dot with remaining 1 Tbsp. butter.
Bake 30 minutes, or until bread pudding is set and top is golden brown and lightly puffed.
Serve hot or at room temperature.
