Tortellini & Shrimp Saute

Ingredients

  • 9.5 oz frozen or fresh tortellini
  • 2 TBS olive oil
  • 1/2 cup chopped onion
  • 1 TBS minced garlic
  • 12 oz peeled, deveined raw shrimp
  • 1 TBS chopped fresh basil

Preparation

Step 1

1. Start boiling water four inches deep in a large saucepan. When boiling, add tortellini and follow directions on package to cook. When they are just tender, drain them in a colander.

2. While tortellini are boiling, heat the olive oil in a large, nonstick frying pan over medium high heat. When hot, add the onions and saute for about 4 minutes. Stir in minced garlic and saute a couple of minutes more. Stir in the shrimp and saute an additional 2 minutes, stirring often. Add in fresh basil and cooked tortellini and saute 1 minute more. Add salt and pepper to taste.
