Ingredients
- 1/4 cup Dijon mustard
- 1/4 cup coarse-grain (stone-ground) mustard
- 1/4 cup German mustard
- 1/4 cup white vinegar
- 1/3 cup apple juice
- 1 1/2 Tbsp. lemon juice
- 1/4 tea. grated lemon zest
- 1 shallot, peeled and thinly sliced
- 1 clove garlic, minced
- pepper
- 4 boneles, skinless chicken breasts (1 lb. total)
Preparation
Step 1
In a shallow non-aluminum dish, combine mustards, vinegar, juices, zest. shallots, garlic and pepper. Add chicken and turn to coat. Cover and marinate for 2-4 hours in refrigerator, turning occasionally.
Remove chicken from marinade, discard the marinade, and grill chicken on lightly oiled grill for about 3-4 minutes per side, or until no longer pink inside.
