Chicken - Grilled Mustard Chicken

  • 1/4 cup Dijon mustard
  • 1/4 cup coarse-grain (stone-ground) mustard
  • 1/4 cup German mustard
  • 1/4 cup white vinegar
  • 1/3 cup apple juice
  • 1 1/2 Tbsp. lemon juice
  • 1/4 tea. grated lemon zest
  • 1 shallot, peeled and thinly sliced
  • 1 clove garlic, minced
  • pepper
  • 4 boneles, skinless chicken breasts (1 lb. total)

Preparation

Step 1

In a shallow non-aluminum dish, combine mustards, vinegar, juices, zest. shallots, garlic and pepper. Add chicken and turn to coat. Cover and marinate for 2-4 hours in refrigerator, turning occasionally.

Remove chicken from marinade, discard the marinade, and grill chicken on lightly oiled grill for about 3-4 minutes per side, or until no longer pink inside.
