A simple side that is sure to win big, even with the kiddos. With bold flavor, it and bright color is a showstopper beside any entrée. Tip: Purchase a block of fresh Parmesan from the local market. Using true Parmesan will round off the polenta with fruity and nutty notes.

- 8 ounces prepared polenta, cut into 8 (1/2-inch-thick) slices
- 2 tablespoons finely grated Parmesan cheese
- 1 1/2 tablespoons butter, melted

Preparation
Step 1
1. Preheat broiler to high.
2. Heat an ovenproof skillet over medium-high heat. Coat pan with cooking spray. Add polenta to pan; cook 2 minutes on each side or until golden. Sprinkle with Parmesan cheese and butter. Broil 2 to 3 minutes or until cheese melts.
