Vegetables: Cold Pack Okra

This tangy way to enjoy okra is a simple and quick recipe.

Ingredients

  • 3/4 lb. raw okra
  • 1-2 jalapeno peppers, sliced, seeds removed
  • 1/4 C sugar
  • 1 1/2 C vinegar
  • 2 Tablespoons pickling salt
  • 1 1/2 teaspoons horseradish
  • 3 cloves garlic, smashed
  • 6-8 Tablespoons water

Preparation

Step 1

Bring garlic, salt, sugar, vinegar and water to a simmer in a small pot. Immediately turn off heat and let cool 10 minutes. Meanwhile, place okra and peppers in pint-sized jar. Pour liquid mixture over veggies and add horseradish. Tighten lid and shake several times.
Allow to reach room temperature before refrigerating.
Let sit at least 3-4 days before eating.
