Preparation

Step 1

1-Peel and core your apples and dice them nice and small. Place in a bowl of iced lemon water to stop browning.

2-Mix together the sugar, maple syrup, nut meg, vanilla and cinnamon, in a small bowl. Drain your diced apples and dry the apples then place back in the bowl and mix in the sugar mixture and make sure all is well coated.

3-Roll out your Phyllo pastry and use a damp cloth or paper towels to cover while not in use. These can dry out real fast, so keep them covered when not using.

4-Take 2 sheets and lay them on your work space and add a 1/4 cup of the apple mixture to the middle of one end of the sheets. Fold the sides in gently.

5-Then begin to roll up gently but firmly and as you reach the end lightly wet the edge with your fingers and seal and lay on a presprayed baking sheet seam down. Repeat till all 12 are done. Brush lightly with the melted butter. Place in the fridge for at least 30 minutes to chill.

6-Preheats oven to 350 F. Place the apple logs in the oven and bake fr 15-20 minutes till golden brown.
