Coconut Curry Chicken (Sharon's)

Ingredients

  • 2 lbs cubed chicken breasts
  • 1 1/2 tbsp coconut oil
  • 2 tbsp curry powder
  • 1/2 chopped yellow onion
  • 1 tsp salt and pepper
  • 1 can diced tomatoes
  • 1 small can tomato sauce
  • 1 can coconut milk
  • 3 tbsp sugar

Preparation

Step 1

Heat oil and add curry powder cook for one minute add onion cook for 2 minutes.
Put salt and pepper on the chicken.
Add chicken to curry and onions cook until done.
Add the rest of the ingredients and sauté on low for 30-40 min. Put over top of rice and enjoy !! Yummmm
