Banana sour cream coffee cake

  • 1/2 c shortening
  • 1 c sugar
  • 2 eggs
  • 1 c mashed bananas
  • 1/2 t vanilla
  • 1/2 c sour cream
  • 2 c sifted flour
  • 1 t baking soda
  • 1 t baking powder
  • 1/4 c chopped nuts
  • 1/2 t cinnamon
  • 1/4 c sugar



Step 1

Cream shortening and 1 c sugar til,fluffy. Beat in eggs, banana and vanilla. Fold in sour cream. Sift dry ingredients together add to creamed mix, stirring to blend. Mix nuts, 1/4 c sugar and cinnamon. Sprinkle half of nuts in bottom of well-greased 6 1/2 c ring or tube pan. Spoon in half the batter. Sprinkle with remaining nuts, add rest of batter. Bake at 350 for 45 min or until done. Let stand in pan in rack for 5 min. Loosen around edges and turn out on plate. Serves 10-12
