Ingredients
- 1 Tbsp. olive oil
- 3 apple chicken sausages (approx. 4 inches)
- 1 medium yellow onion, thinly sliced
- 2 cups orange lentils
- 1/2 bottle of dark beer
- 1/2 tsp. poultry seasoning
- Salt and pepper to taste
Preparation
Step 1
Sauté sausages and onion in olive oil until sausages are brown and onions are caramelized (approx. 5 to 8 minutes). Remove sausages and cut into 1-inch slices. Add back into pan with lentils, beer, poultry seasoning, and salt and pepper. Simmer 10 to 15 minutes and serve with spinach salad for a boost of iron. Serves 4.
