Ingredients
- 1 pre baked pie crust, that is cooled
- 2 small shallots, finely minced
- 1 tablespoon olive oil
- 6 meaty strips of good bacon, diced
- 7 ounces of spinach, washed and dried well
- 6 eggs
- 1 cup whole milk
- 1 cup heavy cream
- 8 ounces swiss cheese, grated
Preparation
Step 1
Preheat oven to 425.
Heat olive oil in a large frying pan over medium low heat. Add the shallots and cook for 3 minutes until soft.
Add the bacon, stir and cook for 5 minutes. Stir in the spinach and cook for 1 minute. Remove from the heat and set aside.
In a food processor add the eggs, milk and cream. Mix until well combined, about 1 minute.
Add the cheese, and pulse for 30 seconds.
Pour the bacon mixture into the pre-baked pie crust, then pour the egg mixture over the top.
If you are going to be making this the day before serving, bake for 25 minutes. Then remove from the oven, let cool, then place in the fridge over night. Then the next day before serving, preheat the oven, and continue baking for 20 minutes (until heated throughout).
If you are going to serve the same day, bake for 30 - 45 minutes, until set and lightly golden on top.
