Ingredients
- 1/4 cup butter
- 1/4 cup all purpose flour
- 2 1/2 cups milk
- 1 cup beer or water
- 1 1/2 tsp dry mustard
- 1 Tbsp worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 2-1/2 cups shredded cheddar cheese
- garlic or herbed croutons (optional)

Preparation
Step 1
Melt butter in large sauce pan over medium heat.
Stir in flour until smooth.
Cook 1 minute, stirring constantly.
Stir in milk, beer, worcestershire sauce, mustard, salt and pepper.
Heat to a boil, stirring frequently.
Reduce heat, simmer 10 minutes keep stirring.
Stir in cheese until melted.
Ladle soup into bowls add croutons on top.
