Ingredients

  • 1/4

    cup butter

  • 1/4

    cup all purpose flour

  • 2 1/2

    cups milk

  • 1

    cup beer or water

  • 1 1/2

    tsp dry mustard

  • 1

    Tbsp worcestershire sauce

  • 1/2

    tsp salt

  • 1/4

    tsp cayenne pepper

  • 2-1/2

    cups shredded cheddar cheese

  • garlic or herbed croutons (optional)

Directions

Melt butter in large sauce pan over medium heat. Stir in flour until smooth. Cook 1 minute, stirring constantly. Stir in milk, beer, worcestershire sauce, mustard, salt and pepper. Heat to a boil, stirring frequently. Reduce heat, simmer 10 minutes keep stirring. Stir in cheese until melted. Ladle soup into bowls add croutons on top.
