Ingredients

  • CAKE:

  • 1

    package Devil's Food cake

  • 3

    TBS Amaretto liquor

  • 1/2

    tsp almond extract

  • FILLING:

  • 6

    oz cream cheese, softened

  • 1/2

    cup powdered sugar

  • 1

    tsp almond extract

  • 1/3

    cup Amaretto liquor

  • 1

    quart heavy cream

  • 1/2

    cup almonds, toasted

  • FROSTING:

  • 1/2

    cup butter, softened

  • 1

    cup powdered sugar

  • 1/3

    cup heavy cream

  • 1 1/2

    tsp vanilla

  • 1/2

    cup unsweetened cocoa powder (use more for darker flavor, less for lighter flavor)

Directions

CAKE: Prepare cake mix as directed, then add amaretto and almond extract. After cooking, brush tops of layers with amaretto. FILLING: 1. Toast almonds by placing on a baking sheet in a 325F oven about 5 minutes, shaking once or twice to prevent burning. 2. In a mixing bowl, cream together cream cheese and powdered sugar until smooth and well-blended. Add almond extract and amaretto, and mix well. In a separate bowl, whip the cream until stiff peaks form. Fold whipped cream and toasted almonds into cream cheese mixture. FROSTING: 1. Cream the butter in a small bowl. Blend in cocoa powder, vanilla, powdered sugar, alternately with cream. Beat with mixer until desired texture is achieved. To assemble cake, spread filling between layers, and frost. Refrigerate until serving. This cake is better cold, and better the second day.
