Ingredients
- Salad:
- 1 (16 oz) pkg romaine lettuce, thoroughly washed
- 1 (6 oz) block Swiss cheese, shaved
- 1 c roasted, salted cashews
- 1 / c sweetened dried cranberries
- 1 large apple, thinly sliced
- 1 large pear, thinly sliced
- Lemon-Poppy Seed Dressing:
- 2/3 c light olive oil
- 1/2 c sugar
- 1/3 c fresh lemon juice
- 1-1/2 Tbsp poppy seeds
- 2 tsp finely chopped onion
- 1 tsp Dijon mustard
- 1/2 tsp salt
Preparation
Step 1
Salad:
Toss together the salad ingredients in a large bowl; serve with Lemon-Poppy Seed Dressing.
Dressing:
Process the oil and remaining ingredients except the seeds in a blender until smooth. Stir in the poppy seeds.
Store in an airtight container in the refrigerator for up to 1 week; serve at room temperature.
