Great Grandma's Wakefield Noodles

  • 2 c. flour
  • 2 T. milk
  • 2 eggs
  • 1 t. salt

Preparation

Step 1

Put flour in bowl. In smaller bowl, break eggs and stir them (DON'T BEAT) with milk. Make a well in the flour and pour eggs into well. Gradually stir in flour to make soft dough. Place on board with remaining flour. Work in more flour till desired texture-not sticky at all-ready to roll out. Seperate into 2 balls of dough. Roll to 1/8-inch thick, dry 1 hour, turn over and dry 1 hour more. Slice and stack slices to get ready-then cut to noodles. Dry and shake off excess flour. Can now be cooked or frozen.
To cook: place carefully into boiling meat broth; stir quite often until froth dies down. Cook uncovered 20-25 minutes. cover and simmer for 10 minutes or until noodles are tender and done. Add cooked meat last 10 minutes, if desired.
