Deviled Eggs

Ingredients

  • 2 dozen hard cooked eggs
  • 2-3 T. mustard
  • 1 T. mayo
  • 1/8 c. sweet pickle juice
  • 1 tsp. salt
  • Maybe some cider vinegar

Preparation

Step 1

Combine yolks with other ingredients place mixture in plastic bag and pipe into egg shite halves.
Hings for hard cooked eggs:
Remove eggs from fridge several hours or overnight before cooking. Place in a pan of cold water to cover. Heat to simmer and let barely simmer 20 to 25 minutes. Do not boil. OR...Heat to boiling, remove from heat and let set in the hot water 20 to 25 minutes. Cool immediately and crack shells especially at the large ends. Let cold eggs set in ice water until ready to peel. Water will loosen shell if membrane in large end is torn and water seeps in. If eggs have been stored with big end down the yolks will be centered in whites for more uniform slices.
