cups all-purpose flour
teaspoons baking powder
teaspoon baking soda
cup cooked rice (preferably day-old)
large egg, separated
tablespoons unsalted butter, melted
1. Preheat a waffle iron until hot. 2. Whisk together flour, baking powder, baking soda, and salt, then mix in rice with your fingertips. Stir in milk, yolk, and butter until just combined. Whisk egg white until it just holds stiff peaks, then fold into batter gently but thoroughly. 3. Lightly brush waffle iron with oil and cook waffles according to manufacturer's instructions. Makes 4 servings. Each serving = 6 Weight Watchers points.
