Ingredients

    eggs

  • 1/2

    cup milk

  • 1/4

    tsp salt

  • 1 1/4

    cups finely chopped pecans

  • 1

    tsp ground cinnamon

  • 8

    slices whole grain bread

  • maple syrup

Directions

Preheat oven to 200 degrees and line a baking sheet with parchment paper. In a shallow dish, whisk together the eggs, milk, and salt. Place the chopped pecans in another shallow dish and mix in the cinnamon. Dip the bread, one piece at a time, in the egg mixture, turning once and allowing excess mixture to drip off. Transfer to the dish with the pecans and gently press the nuts onto the bread with your hands. Repeat with all 8 slices. Coat a large griddle and place over medium heat. Cook the bread in batches about 2 minutes per side or until browned. As you finish each batch, set slices on parchment paper in oven to keep warm. Drizzle with syrup.
