ears sweet corn, kernels removed
English cucumber, halved lengthwise and sliced
cup olive oil
cup white balsamic vinegar
TBS apricot jelly or orange marmalade
tsp whole grain mustard
Salt and pepper, to taste
Toss corn, cucumbers and scallions in a lrg bowl. Place remaining ingredients in a blender and blend until smooth and incorporated. Drizzle dressing over vegetables and toss to coat. Taste and adjust seasonings.
