HOT CORN DIP

  • 1 1/2 Tablespoon butter
  • 2 cups corn (can use frozen)
  • 1/2 red onion, chopped
  • 2-3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 jalapeno, optional, chopped and deseeded
  • 4 oz cream cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup Dr Pepper
  • 2 oz green chiles (half a can)
  • 2 green onions, chopped
  • 2 cups shredded cheese
  • 2 teaspoons taco seasoning, optional

Preparation

Step 1

First, chop all of your vegetables to 1/2" or smaller.
Place 1/2 Tablespoon of butter in a skillet over medium heat and melt.
Add the corn and saute until slightly browned and fragrant.
Remove the corn to a medium-sized mixing bowl and add 1 Tablespoon butter to the skillet.
Add the garlic, red onion, bell pepper and jalapeno.
Saute until slightly browned, then remove to the bowl with the corn.
Add the cream cheese, sour cream and mayonnaise to the bowl and mix well.
Add green onions, green chiles and Dr Pepper. Stir.
Add 1 1/2 cups of the cheese slowly, mixing well to incorporate.
Fold the mixture into your serving dish and top with remaining 1/2 cup cheese.
Bake for 10-15 minutes until cheese is melted.
