Ingredients
- 1 1/2 T cider vinegar
- 1 1/2 T olive oil
- 1/4 t Kosher salt
- 1/4 t pepper
- 1 1/2 C thinly shaved carrot
- 1 small Vidalia onion , vertically thinly sliced
- 1 1/2 thinly shaved cucumber
- 1 C flat leaf parsley leaves
Preparation
Step 1
Combine vinegar, oil, salt & pepper in med bowl. Add carrot & onion, toss to coat. Let stand 15 min.
Add cucumber & parsley to bowl; toss to coat. Serve
