  • 1/2 Cup Graham Cracker Crumbs
  • 4 Tbs. Butter, softened
  • 2 Tbs. Sugar
  • 2 Eggs
  • 2 (8 oz.) Pkgs. Cream Cheese, softened
  • 1/2 Cups Sugar
  • 1/2 tsp. Vanilla
  • 2 Cups Crushed Pineapple, drained
  • 1/8 tsp. Cinnamon
  • 1 Pint Sour Cream
  • 2 Tbs. Sugar
  • 1 tsp. Vanilla

Preparation

Step 1

In a small bowl cream together graham crumbs, butter, and 2 Tbs. sugar. Pat into greased 9" pie pan and refrigerate. Combine eggs, cream cheese, 1/2 cup sugar, vanilla, pineapple, and cinnamon and blend well. Pour mixture into crust. Bake at 350 degrees for 30-40 minutes or until knife inserted in center comes out clean. Let cool for 15 minutes. Combine sour cream, 3 Tbs. sugar and vanilla and mix well. Spread sour cream mixture over cheesecake. return to oven and bake 5 minutes longer. Cool for 15 minutes. Refrigerate until ready to serve.
