Ingredients
- 60 Ritz Crackers, crushed
- 8 Tbs. Butter, melted
- 1/2 gal. Vanilla Ice Cream
- 1 1/2 Cups Milk
- 2 Small Packages, Instant Coconut Cream Pudding
- 8 oz. Carton Whipped Topping

Preparation
Step 1
Combine crackers and melted butter. Reserve 1/4 cup crumbs. Pat remaining crumbs into the bottom of a 9 x 13 inch baking dish. Let ice cream stand at room temperature for about 1/2 hour to soften. Add milk and pudding to ice cream and beat until smooth. Pour over cracker crumbs. Refrigerate to chill and set. Immediately before serving, spread whipped topping over ice cream mixture. Sprinkle with reserved 1/4 cup crumbs.
