Mandarin Chicken Salad

Ingredients

  • Dressing:
  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 c red wine vinegar
  • 6 tbsp corn oil
  • 1/4 c sugar
  • Salad:
  • 4 or 5 mandarins, peeled and separated
  • 4 skinless, boneless chicken breasts, cooked and chopped
  • 1 head iceberg lettuce, cored and chopped
  • 1 c petite frozen peas
  • 1/2 c chopped cilantro
  • 1/2 c toasted slivered almonds
  • 1/4 c toasted sesame seeds
  • 2 c maifun rice noodles, cooked per package instructions

Preparation

Step 1

Dressing: In a small bowl, whisk together all ingredients. Refrigerate until ready for use. Whisk again before use.

Salad: In a large bowl, toss together all ingredients except noodles. Pour dressing over salad to taste and toss well. Stir in noodles. Serve immediately.
