Baked rice

Ingredients

  • 2 Tab butter
  • 2 Tab minced onion
  • 1/2 tea minced garlic
  • 1 cup rice
  • 1 1/2 cups chicken broth or water
  • Thyme – 1 sprig fresh or 1/4 tsp dried
  • 1/2 bay leaf
  • 3 sprigs parsley
  • Salt / pepper to taste

Preparation

Step 1

Add onion & garlic to the melted butter, cook
until transparent. Add rice, stir briefly until
coated with butter. Stir in broth & herbs. Bake in a
greased casserole in a 400^ oven for 17+ minutes.
Discard fresh herbs. 4 servings
