Millionaire Shortbread

These are a must for a pot luck or party. They are great just to bake for someone for a treat. They are just like a twix bar. I sometimes make a chocolate shortbread base instead of the usual base. This is a British recipe which I have had for year so there will be some conversion necessary if you don't have a scale. It is made in 3 steps. Family Favourite

Ingredients

  • Shortbread Base:
  • 8 oz flour
  • 4 oz butter
  • 2 oz sugar
  • Caramel Filling:
  • 4 oz margarine or butter
  • 4 oz brown sugar
  • 2 tablespoons dark corn syrup
  • 5 fl. oz condensed milk
  • Topping:
  • 4 oz plain chocolate
  • 1/2 oz butter

Preparation

Step 1

Preheat oven to 350 - grease an 8" square or 11 x 7 oblong pan

Cream together the butter and sugar until light and fluffy. Add the flour and stir until the mixture binds together. Knead until smooth (or place in processor and pulse 1 or 2 times. Press evely into the tin and prick - bake for 25-30 minutes. Cool

Place the filling ingredients in a saucepan and heat gently, stirring until the sugar has dissolved. Slowly bring the mixture to the boil and then boil gently while stirring for 5-7 minutes until thick. Allow to cool slightly before pouring on the base.

Melt the chocolate and butter together and stir well. Spread over the caramel filling. Allow to set and cut into finger or squares.
