Ingredients

  • Vegetable oil cooking spray
  • 1 cup unbleached white flour
  • 1 cup yellow cornmeal
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 1/4 cups of buttermilk
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1/4 tp 1/3 unrefined sugar
  • 1/3 cup melted butter or veg oil

Preparation

Step 1

Preheat the oven to 400. Spray a 12-cup muffin tin with oil, or line with muffin papers.

Combine the flour, cornmeal, salt, and baking powder in a large bowl, stirring well. Set Aside.

Whisk together the buttermilk and baking soda in a medium bowl until the baking soda is dissolved. Whisk in the eggs, sugar, and melted butter or oil.

Stir the combined wet ingredients into the dry until the mixture is just barely combined.

Spoon into the prepared muffin tin.

Bake until golden brown, 50 - 20 min.
