Marbled Mousse Cake
Ingredients
- 1 8 ounce package chocolate wafers, crushed
- 3 sticks margarine
- 4 cups whipping cream
- 12 ounces white chocolate
- 2 tsp vanilla3- 12 ounce packages semi sweet chocolate
- 5 eggs, room temperature
- 1/4 confectioner’s sugar

Preparation
Step 1
Mix crushed wafers with 1 stick of margarine. Press into bottom of spring form pan. Refrigerate.
In microwave, heat ½ cup of whipping cream and 4 tablespoons of margarine for 1 minute at medium heat until margarine melts. Once melted pour over whit chocolate in a bowl. Allow to sit for 1 minute. Whisk white chocolate until smooth. Stir in vanilla. Refrigerate. In small bowl with mixer whip 1 ½ cups of whipping cream until stiff peaks form. Fold into white chocolate mixture, Cover and refrigerate.
Cut ¾ cup of margarine into pieces into a saucepan. Add 3 packages of semi sweet chocolate and melt over low heat until mixture is smooth, stirring constantly. Remove from heat.
Separate eggs; place egg whites in a large bowl. Beat egg yolks and cooled chocolate mixture, mixing until smooth. Beat egg whites until foamy, add confectioner’s sugar. Beat until stiff peaks form. In separate bowl, beat 2 cups of whipping cream until stiff peaks form. Alternately fold whipped cream and whipped egg whites into chocolate mixture 1/3 of each at a time. Mix thoroughly. Pour chocolate mixture into prepared spring form pan. Add spoonfuls of white chocolate mousse and more dark chocolate to create a marbled effect. Run a knife through the cake to marbleize more. Refrigerate.
