Asparagus with Mimosa Topping

Ingredients

  • 1 pound of fresh asparagus
  • 1 tsp. cider vinegar
  • 1 tsp. extra virgin olive oil
  • 1/8 tsp. kosher salt
  • 1/8 tsp. freshly ground black pepper
  • 1 grated hard cooked egg
  • 2 Tbsp. sautéed finely diced spicy smoked sausage
  • 1 tsp. chopped chives

Preparation

Step 1

Trim asparagus; cook in boiling salted water to cover 1 to 2 minutes or until crisp-tender. Drain. Plunge into ice water; drain. Toss with cider vinegar olive oil, salt and pepper. Place on serving dish and top with egg, sausage and chives.

May be served with hot sauce.
